Healthy Hearty Meatballs

The true title for these meatballs should be “The Best Meatballs You’ve Ever Had” because they are just that!

This recipe is one that I came across years ago when I was a hiking guide at a fitness spa. I changed and tweaked a few things and they have become one of my family’s favorite dishes. They can dress up your typical spaghetti dish into a work of culinary art! These meatballs are easy, healthy, and freeze well– so you can make a big batch and bring them out as needed.  My kids like to eat them plain as well!

Ingredients:

Ground Turkey (I usually get 99% Extra Lean)

Cooked Brown Rice or Quinoa (This time, I used a mix of both– you can get these at Costco. Seeds of Change Brown Rice and Quinoa)

Egg Whites (or eggs, your choice)

Roasted Red Pepper (comes in jar or you can roast your own, see instructions HERE)

Corn

Fresh Italian Parsley

Onion Powder

Garlic Powder

Salt

Pepper

For Spaghetti:

Marinara

Spaghetti Noodles

DIRECTIONS:

Preheat oven to 350 degrees. In a mixing bowl, add all the meatball filling together and mix.

Spray a cookie sheet with non stick cooking spray, or cover with parchment paper. Roll up meatballs (about a 1/4 cup scoop size).

Cook in the oven for 20-25 minutes or until done. Bring marinara up to a simmer, cook spaghetti noodles, and enjoy!

AND these meatballs also work great for meatball sandwiches.

2 C. Cooked Brown Rice or Quinoa (or both)

3/4 C. Egg Whites (Eggs)

1/2 C. Roasted Red Peppers (Bottled or Roast Yourself– instructions above)

1/2 C. Corn

1/4 C. Fresh Italian Parsley, chopped

1 Tbs. (heaping) Onion Powder

1 Tbs. (heaping) Garlic Powder

1 Tsp. (heaping) Salt

1 Tsp. Black Pepper
